Can you tell all I think about is food this time of year? But I digress, my close friend Kim brought these to a party we had, and it was all over. They are incredible, and you only need a few ingredients for an appetizer that anyone is sure to love. Despite the main ingredient, they aren’t hot, like I assumed they would be. Apparently all of the heat from jalapenos are in their seeds, which we remove to make these yummylicious little treats. You can make these ahead of time and just pop in the oven right before the party or dinner. Love that about them!
8 oz package of cream cheese
1.5 cups of cheddar or colby-jack cheese
12 medium jalapenos
2 pounds of uncooked bacon
Your favorite BBQ sauce
Directions:
Slice jalapenos right down the middle, and remove the seeds and stems. Take it from me, and WEAR GLOVES during this step. Otherwise the oils will get into your skin and it’s really hard to get out.
Mix up the cream cheese and shredded cheese. Stuff the jalapeno’s with the mixture, wrap in strips of bacon and secure with a toothpick. Brush lightly with the BBQ sauce of your choice (we think a sweet/spicy mix works best).
Bake in a 350 degree oven for 30 minutes or until bacon is crisp. That’s it!
