Kim’s Easy Jalapeno Poppers

Can you tell all I think about is food this time of year? But I digress, my close friend Kim brought these to a party we had, and it was all over. They are incredible, and you only need a few ingredients for an appetizer that anyone is sure to love. Despite the main ingredient, they aren’t hot, like I assumed they would be. Apparently all of the heat from jalapenos are in their seeds, which we remove to make these yummylicious little treats. You can make these ahead of time and just pop in the oven right before the party or dinner. Love that about them!

Leftover Turkey Egg Rolls

These amazingly delish Turkey Egg Rolls are a new tradition in our house. I was searching for something easy and quick to do with my big bowl of leftover turkey from Thanksgiving, I was inspired after eating Chinese the other day, so I came up with these. They filled my requirements for the recipe I needed, they were quick to make, definitely out of the ordinary (i.e. weary of turkey soup & sandwiches), and they used up all my leftover turkey, but most importantly, my entire family LOVES them! Chocolate Monkey Truffles

Oh lordy, y’all, I made the best thing last night. Seriously. These quick-to-make truffles have a base of peanut butter and banana, smothered with chocolate. They don’t take many ingredients, and they are in handy bite-size bits. Plus they melt in your mouth and will seriously make people think you spent hours in the kitchen.  Did I mention you can make these ahead of time and freeze them, for parties? What’s not to love?

Delicious Gluten Free Pizza

Ok, I’m coming out of the closet. I have a gluten allergy. I spent several years in denial, stuffing myself with bread, and having recurrent health problems, before I finally got a blood panel done that confirmed the diagnosis. I spent the interim, waiting on the results, thinking that I had an autoimmune disease like lupus. If you’ve ever known someone who had lupus, or even googled it, you’ll know why that was a terrifying proposition! When I finally learned what was causing my illness, my reaction was “That’s IT?! That’s so easy to fix!” Although I was that person who could (and would) eat bread for my entire dinner, it’s all about perspective. Even now, every time I’m tempted to reach for that dinner roll, I remember all over again that my health could very well could be out of my power. And when I remember that…well… that dinner roll doesn’t seem quite so tasty anymore, and I sure don’t bother feeling sorry for myself.

The Best DIY Christmas Gift!

Every year, through those months of November and December, my husband invariably comes home with goodies after a long workday. Everything from baked goods, to book marks; as a professional horseshoer, he is blessed with some amazing clients! Because of this, I try to have items for my husband on hand to give out to his clients in return.

This past year, I found this super-cool recipe for Cowgirl Cookies, a mason jar DIY recipe, here at Bakerella, and they were an absolute smash hit! These are a basic chocolate-chip, oatmeal pecan cookie mix, stored and presented in a decorated mason jar. They have super simple directions printed right on the jar label, to add three ingredients, mix and bake!
